Aceto Balsamico di Modena IGP is gained adding to wine strong vinegar grape must, concentrated or done,    obtained  from vines  established by the production disciplinary IGP, among which Lambrusco and Trebbiano, typical of our area. The percentage of the two parts depends on the final product we  want to obtain, which ripens in durmast   barriques for at least 60 days, for our products in particular at least 1 year.

We are certified CSQA and we handcrafted follow the production  and the packing , guaranteeing  the  product traceability to safeguard the consumer. The value of balsamic vinegar depends therefore on different factors: grapes quality and must density, length of remaining into the barrels, and of course producer experience and ability to mix the components in order  to obtain an harmonious and balanced product.

IGP REGULATIONS

The geographical protected mark of balsamic vinegar has been registered with European Community regulation n. 583 of 03 July 2009.
